Ingredients

    • 45 ml (3 tbsp) olive oil
    • 125 ml (1/2 cup) white wine
    • 2 x 400 g packs frozen hake fillets
    • 4 tomatoes, diced
    • 30 ml (2 tbsp) mixed herbs
    • 1 onion, diced
    • 125 ml (1/2 cup) black olives, pitted, roughly chopped
    • 125 ml (1/2 cup) bread crumbs
    • 1/4 cup cornflake crumbs
    • 1/4 cup cheddar cheese, grated
    • 4 cups cooked Spekko Saman Brown Rice
    • salt and pepper to taste

Method

    1. Preheat the oven to 180°C.
    2. Spread 1 tablespoon of olive oil on the bottom of a baking dish, add white wine and place fish fillets on top. Sprinkle fish with salt and pepper
    3. In a bowl mix together tomatoes, mixed herbs, onions, olives and 1 tablespoon of olive oil. Mix together well and spread over the fish. Bake for 20-25 minutes.
    4. In a bowl mix together the breadcrumbs, cornflakes, cheddar cheese and the last tablespoon of olive oil. Mix well. Sprinkle mixture over the fish. Put oven on grill and grill for a few minutes until golden brown. Serve with warm Spekko Saman Brown Rice.
