Baked lemon rice pudding

It takes time, to cook, but this is such a delicious pudding, you will want to make it again and again. Just milk, rice, sugar and lemon makes it easy too.

Ingredients

    • 60 ml (¼ cup) Spekko Long Grain Parboiled Rice
    • grated rind of 1 lemon
    • 25 ml (4 tsp) sugar
    • 500 ml (2 cups) milk
    • juice of 1 lemon
    • cream to serve
    • extra lemon rind to garnish

Method

    1. Preheat oven to 130 °C. Rinse Spekko Rice in cold water and drain.
    2. Mix rice, rind, sugar and milk in an ovenproof dish. Bake for 2½ hours, stirring every 45 minutes.
    3. Stir in lemon juice and add some more milk if necessary.
    4. Chill pudding well and serve with whipped cream and garnish with extra lemon rind.
