Berry and apple bakes with nutty rice crumble toppings

This fragrant dessert by Dorah Sitole is a version of a traditional apple crumble.

Ingredients

    Filling

    • 1 X 440 g can apple slices
    • 250 ml (1 cup) frozen mixed berries, thawed
    • 65 ml (¼ cup) brown sugar
    • 5 ml (1 tsp) vanilla essence
    • 5 ml (1 tsp)  cinnamon

    Topping

    • 30 ml (2 tbsp) butter
    • 45 ml (3 tbsp) brown sugar
    • 250 ml (1 cup) cooked Spekko Saman White Rice
    • 75 ml (5 tbsp) chopped pistachio nuts
    • 75 ml (5 tbsp) chopped hazelnuts
    • 5 ml (1 tsp) cinnamon

     

Method

    1. Preheat oven to 200 degrees C.
    2. Drain canned apples and mix together with berries, brown sugar, vanilla and cinnamon. Divide filling between 4 ramekins.
    3. To make topping: Cream together butter and sugar, mix in rice, nuts and cinnamon.
    4. Generously top each ramekin and bake for 20 – 25 minutes until golden on top and bubbly beneath.
    5. Serve warm with cream or ice cream.
