Brown rice and sundried tomato salad with fresh baby tomatoes, olives and red onions

This salad takes less than half an hour to prepare and can be served as a side dish with a roast or braai.

Ingredients

    • 625 ml (2½ cups) Spekko Saman Brown Rice
    • 250 ml (1 cup) marinated sundried tomatoes, sliced
    • 1 red onion, thinly sliced
    • 200 g pitted black olives
    • 250 ml (1 cup) coarsely chopped Italian parsley
    • salt and freshly ground black pepper to taste
    • juice of 3 lemons

Method

    1. Cook Spekko Saman Brown Rice with salt according to the instructions on the pack. Drain well and allow to cool.
    2. Stir the remaining ingredients into the rice and season to taste with salt and pepper.
