Lamb mince and green pea curry

Ingredients

    • 60 ml (4 tbsp) clarified butter
    • 500 g lamb mince
    • ¾ cup finely chopped onions
    • 3 whole cloves
    • 2 cinnamon sticks
    • ½ tsp ground ginger and garlic
    • 2 green chillies, sliced
    • ½ tsp turmeric powder
    • 5 ml (1 tsp) garam masala
    • ½ tsp chilli powder
    • 5 ml (1 tsp) ground cumin
    • 1 large tomato, skinned and grated
    • 250 ml (1 cup) fresh peas
    • salt to taste
    • 5 ml (1 tsp) lemon juice
    • 15 ml (1 tbsp) chopped fresh mint
    • 15 ml (1 tbsp) chopped fresh coriander
    • 4 cups cooked Spekko Long Grain Parboiled Rice

Method

    1. Heat the butter in a saucepan, add the cloves and cinnamon sticks and fry.
    2. Add the onions and fry until golden brown.
    3. Add the ginger and garlic with the minced lamb into the heated oil, stir until meat is slightly browned.
    4. Mix in the green chillies, turmeric powder, garam masala, chilli powder and ground cumin. Mix and simmer for a few seconds.
    5. Add the tomatoes, cover and cook for 3-4 minutes.
    6. Add the fresh peas, continue to simmer for 8-10 minutes.
    7. Season with salt and lemon juice.
    8. Garnish with chopped mint and coriander and serve with Spekko Long Grain Parboiled Rice.
