Manisha’s stuffed peppers with minced lamb, brown rice and Italian herbs

Ingredients

    • 1 onion, finely grated
    • ½ carrot, finely grated
    • ½ pepper, chopped
    • 7, 5 ml (1 ½ tsp)crushed garlic
    • 5ml (1 tsp) Italian herbs
    • 15 ml (1 tbsp) chilli powder
    • 5 ml (1 tsp) cumin powder
    • 5 ml (1tsp) coriander powder
    • 500 g lamb mince
    • 1 X 410 g can chopped tomatoes
    • 500 ml (2 cups) cooked Spekko Saman Brown Rice
    • 65 ml (1/4 cup) chopped fresh coriander
    • 125 ml (1/2 cup) grated mozzarella cheese
    • 65 ml (1/4 cup) chopped spring onions
    • 6 green or red peppers, halved and deseeded
    • grated Parmesan cheese to serve
    • salt and pepper to taste
    • olive oil

Method

    1. Heat oven to 180ºC.
    2. Sauté onions, carrot and chopped pepper in olive oil until caramelised.
    3. Add garlic, Italian herbs and spices and sauté for 30 seconds.
    4. Add mince and cook until browned.
    5. Add tomatoes and simmer for 20 to 30 minutes until cooked. Cool down.
    6. Stir in brown rice, coriander and grated mozzarella. Season to taste.
    7. Steam peppers for 5 to 10 minutes. Lie on a baking tray and drizzle with olive oil.
    8. Stuff peppers with rice mixture and bake for 15 to 20 minutes until cheese begins to melt and bubble.
    9. Sprinkle with Parmesan cheese and serve with a crispy salad.
