MasterChef prawn curry

Deena Naidoo, MasterChef SA season 1, won a challenge stage in the competition with this recipe. Spekko India Gate Classic Basmati Rice is the perfect accompaniment.

Ingredients

    • oil
    • 1 large onion, finely chopped
    • 1 green chilli
    • 15 ml (1 tbsp) garlic and ginger paste
    • ½ tsp ground cumin
    • ½ tsp ground coriander
    • 5 ml (1 tsp) turmeric
    • 1 sprig curry leaves
    • 6 medium-sized jam tomatoes, peeled and pureed
    • 500 g prawns, shelled and deveined with tails intact
    • 500ml (2 cups) cooked Spekko India Gate Classic Basmati Rice
    • fresh coriander leaves
    • 30-45 ml (2-3 tbsp) chilli powder

Method

    1. Stir-fry the onion, curry leaves and chillies in a little heated oil until the onion is golden brown. Stir in the ginger and garlic paste.
    2. Add the cumin, coriander, turmeric, chilli powder, curry leaves and tomatoes. Braise for a few minutes, turn heat down and simmer the tomatoes are fragrant.
    3. Add the prawns. Cover and simmer for another 5 – 7 minutes or until the prawns are just done.
    4. Season with salt and sprinkle with fresh coriander leaves. Serve with Spekko India Gate Classic Basmati Rice
