Ingredients

    • 250 ml (1 cup) Spekko Saman Brown Rice
    • 1 small onion, chopped
    • 1 red pepper, seeded and cut into strips
    • 1 green pepper, seeded and cut into strips
    • 6-8 radishes, sliced
    • 1 small cucumber, sliced
    • 1 small pineapple, peeled, cored and sliced
    • 125 ml (½ cup) sliced celery
    • 1-2 carrots, peeled and cut into thin strips
    • 60 ml (¼ cup) seedless raisins
    • 125 ml (½ cup) French salad dressing of your choice
    • 2 avocadoes, peeled and diced
    • 1 red apple, cored and sliced
    • 60 ml (¼ cup) chopped nuts

Method

    1. Cook Spekko Rice according to the instructions on the pack. Drain and set aside to cool.
    2. Mix all ingredients, except the avocadoes, apple and nuts in a large bowl. Pour some of the salad dressing over and toss lightly. Allow to stand for 1-1½ hours.
    3. Lightly toss in avocadoes, apple and nuts just before serving. This salad is ideal as a light meal, salad or a vegetarian meal.
