Saucy and spicy calamari on spinach rice

This is a spicy calamari dish is quick and easy to make.

Ingredients

    • 30 ml (2 tbsp) olive oil
    • 1 large onion, chopped
    • 2 clove garlic, crushed
    • 2,5 ml (½ tsp) ground coriander
    • 10 ml (2 tsp) paprika
    • 300 g frozen calamari rings, thawed
    • 125 ml (½ cup) natural yoghurt (or maas)
    • 85 ml (1/3 cup) cream
    • 5 ml (1tsp) cayenne pepper
    • Salt and pepper to taste

     

    Spinach rice

    • ½ bunch spinach, finely chopped
    • 30 ml (2tbsp) butter
    • 500 ml (2 cups) cooked Spekko Saman White Rice
    • Salt and lemon pepper
    • Shaved Parmesan cheese to garnish

     

Method

    1. Heat oil in a frying pan and fry the onion and garlic until soft.
    2. Add coriander, paprika and calamari, Stir-fry for 1 minute.
    3. Remove from heat and stir in yoghurt, cream and cayenne pepper. Season to taste.
    4. Return to heat, simmer for 1 minute.
    5. To serve; spoon over spinach rice. If sauce is too dry add a little yoghurt or cream. Garnish with Parmesan shavings.
    6. For the Spinach Rice: saute spinach in melted butter until wilted. Add cooked Spekko Rice, toss lightly to mix through. Season with salt and lemon pepper.
