Ingredients

    • 15 ml (1 tbsp) groundnut oil
    • 400 g lamb cutlets sliced into strips
    • 1 red pepper sliced
    • 1 green pepper sliced
    • 1/3 cup sliced spring onion
    • 2 cloves garlic, crushed
    • 5 ml (1 tsp) finely sliced fresh ginger
    • 30 ml (2 tbsp) black bean sauce
    • 5 ml (1 tsp) red wine vinegar
    • 15 ml (1 tbsp) soy sauce
    • 2 cups cooked Spekko Royal Umbrella Jasmine Rice

Method

    1. Heat oil in wok and stir-fry lamb strips for 1-2 minutes then remove and set aside.
    2. Add the peppers and fry.
    3. Add the spring onions, garlic, and ginger and continue to fry.
    4. Finally mix in the black bean sauce, red wine vinegar, soy sauce and the lamb.
    5. Serve immediately on Spekko Royal Umbrella Jasmine Rice.
