Spicy brinjal rice

This dish is made by frying the brinjals with the aromatic spices and adding this to the rice - creating a spicy rice dish that can be enjoyed as a complete meal.

Ingredients

    • 500 ml (2 cups) Spekko Long Grain Parboiled Rice
    • 30 ml (2 tbsp) cooking oil
    • 10 ml (2 tsp) mustard seeds
    • 5 ml (1 tsp) cumin seeds
    • 1 medium-sized onion, finely diced
    • 500 ml (2 cups) brinjals, diced
    • 2 green chillies, de-seeded and finely sliced
    • 5 ml (1 tsp) turmeric power
    • 30 ml (2 tbsp) lemon juice
    • chopped fresh coriander for garnishing
    • sprig of curry leaves
    • salt to taste

Method

    1. Cook rice according to directions on the packet, drain and set aside. You will get approximately 8 cups of cooked rice.
    2. Add oil to a medium-sized frying pan. Heat for a minute or two.
    3. Add mustard seeds and curry leaves, cumin seeds, onions, diced brinjals and greens chillies.
    4. Cook over a moderate heat until brinjals are cooked and slightly browned – approximately 10 – 12 minutes.
    5. Add salt and turmeric powder.
    6. Cover and cook for another 5 minutes. Stir in lemon juice and cooked rice.
    7. Garnish with fresh chopped coriander.
