Strawberry and white chocolate rice pudding

A very creamy vanilla rice pudding with strawberries.

Ingredients

    • 375 ml (1½ cups) Spekko Saman White Rice
    • 200 g white chocolate, chopped
    • 1 vanilla pod, slit open
    • 3 egg yolks
    • 250 ml (1 cup) castor sugar
    • 300-500 g ripe strawberries, halved
    • 500 ml (2 cups) cream

Method

    1. Cook Spekko White Rice according to the instructions on the pack. Drain and set aside.
    2. Heat cream in a pot over medium heat and stir in chocolate and vanilla pod until chocolate has melted and cream just comes to the boil. Remove from the heat.
    3. Beat egg yolks and sugar in a bowl until light and fluffy. Whisk a small amount of the warm cream into the eggs, taking care not to scramble the eggs. Add remaining cream while whisking.
    4. Return mixture to the pot and allow to simmer gently, until the cream mixture has a thicker, but smooth consistency. It should easily coat the back of a metal spoon.
    5. Stir the rice into the cream. Add half of the strawberries to the rice mixture, serve in bowls and garnish the remaining strawberries.
