Ingredients

    • 125 ml (½ cup) flour, sifted
    • ¼ cup cooked Spekko Saman White Rice
    • 5 ml (1 tsp)  baking powder
    • 500 ml (2 cups) cooked and mashed butternut
    • 5ml (1 tsp) mixed mild masala
    • 2  large eggs, whisked
    • 15 ml (1 tbsp) castor sugar
    • 1/4 tsp ground nutmeg
    • 5 ml (1 tsp) cinnamon powder
    • ¼ cup castor sugar
    • oil for frying
    • lemon slices

Method

    1. Mix together the sifted flour, rice, baking powder, mashed butternut and mild masala.
    2. Beat in the eggs to form a smooth thick batter.
    3. Add the castor sugar and ground nutmeg
    4. Stir well until the castor sugar is dissolved into the batter mixture.
    5. Allow to rest for 15 minutes.
    6. Heat oil in a non-stick frying pan.
    7. Fry spoonfuls of the batter until golden brown.
    8. Remove and drain on a paper towel.
    9. Mix cinnamon powder with castor sugar.
    10. Dust fritters with cinnamon sugar.
    11. Serve hot with lemon slices.
