Baked rice pudding with pistachios
A clever and satisfying recipe for an oven baked rice dessert.
Ingredients
1 vanilla pod
250 ml (1 cup) Spekko Royal Umbrella Fragrant Rice
¼ teaspoon salt
1, 5 L (6 cups) full cream milk
2, 5 ml (½ tsp) cinnamon powder
250 ml (1 cup) sugar
150ml fresh cream
5 egg yolks
30 ml (2 tbsp) pistachio nuts, chopped
butter for greasing
Method
1.Preheat oven to 180°C.
2.Coat a medium sized ovenproof dish with butter
3.Cut vanilla pod in half and scrape off seeds.
4.Wash rice to remove starch. Place rice, vanilla seeds, salt, milk and cinnamon in a saucepan and simmer for 25-30 minutes or until the rice is cooked.
5.Mix together sugar, cream and eggs. Add 3 tablespoons of the hot milk and rice mixture to this egg mixture and mix well. (This process is referred to as tempering).
6.Remove rice from the heat and stir in this egg mixture and chopped pistachios.
7.Pour into ovenproof dish. Bake for 20 – 25 minutes until golden brown.
