Berry and apple bakes with nutty rice crumble toppings
This fragrant dessert by Dorah Sitole is a version of a traditional apple crumble.
Ingredients
- 1 X 440 g can apple slices
- 250 ml (1 cup) frozen mixed berries, thawed
- 65 ml (¼ cup) brown sugar
- 5 ml (1 tsp) vanilla essence
- 5 ml (1 tsp) cinnamon
- 30 ml (2 tbsp) butter
- 45 ml (3 tbsp) brown sugar
- 250 ml (1 cup) cooked Spekko Saman White Rice
- 75 ml (5 tbsp) chopped pistachio nuts
- 75 ml (5 tbsp) chopped hazelnuts
- 5 ml (1 tsp) cinnamon

Method
- Preheat oven to 200 degrees C.
- Drain canned apples and mix together with berries, brown sugar, vanilla and cinnamon. Divide filling between 4 ramekins.
- To make topping: Cream together butter and sugar, mix in rice, nuts and cinnamon.
- Generously top each ramekin and bake for 20 – 25 minutes until golden on top and bubbly beneath.
- Serve warm with cream or ice cream.
