375 ml (1 ½ cups)Spekko Royal Umbrella Jasmine Rice
30 ml (2 tbsp) oil
150 g Chinese sausages or ham, sliced or cubed
4 eggs, beaten
45 ml (3 tbsp) fish sauce
45 ml (3 tbsp) dark soy
1 chilli, chopped
100 ml chopped coriander
4-6 spring onions, chopped
Cook Spekko Jasmine Rice according to the instructions on the pack. Drain and set aside.
Heat oil in a wok and fry sausages or ham for a few minutes. Add eggs and allow to cook until scrambled.
Add rice and season with the fish and soy sauce. Toss together and add chilli, coriander and spring onions. Fry for a few minutes and serve immediately.
