Curry and rice Mzanzi style
It is easy to make this recipe in bulk. If you like, add a pinch of sugar to the mixture to offset the tart tomatoes.
Ingredients
- 30 ml (2 tbsp) oil
- 1 onion, finely chopped
- 1 garlic clove, crushed
- 1 green pepper, finely chopped
- 500 g beef mince
- 30 ml (2 tsp) mild curry powder
- 2 chillies, deseeded and finely chopped
- ½ X 410 g can chopped tomatoes
- 4 cups cooked Spekko Long Grain Parboiled Rice to serve
- fresh coriander for garnishing
- salt and pepper to taste
Method
- Heat oil and sauté the onion, garlic and green pepper until soft. Add curry powder and chillies.
- Add mince, brow, then add the tomatoes. Simmer for 5 minutes.
- Season with salt and pepper.
- Serve on Spekko rice, garnished with finely chopped coriander.
