Dorahs brown rice salad
Quick, easy and crispy - a salad to make within minutes.
Ingredients
- 500 ml (2 cups) cooked Spekko Saman Brown Rice
- 4 spring onions, chopped
- 1 yellow pepper, chopped
- 3 celery stalks, chopped
- 1 firm tomato, chopped
- 2 green apples, diced
- 165 ml (2/3 cup) sultanas or raisins
- 30 ml (2 tbsp) chopped fresh parsley
- 125 ml (1/2 cup) Italian dressing or vinaigrette
- salt and freshly ground black pepper
Method
- Place Spekko Saman Brown Rice in a large bowl, add all ingredients and toss lightly, check seasoning and chill for at least 30 minutes before serving.
- Spekko India Gate Classic Basmati Rice works well in this salad.
- Add chopped nuts of your choice.
- Leftover ice can be used in this recipe
