Easy to Make Ham and Mustard Seed “Risotto”

Children love this recipe. For a “grown-up” version, add chopped red chillies and garlic to the onion and ham when frying.

Ingredients

    30 ml (2 tbsp) butter
    15 ml (1 tbsp) yellow mustard seeds
    1 large onion, chopped
    250 g ham, Russians or Vienna sausages, chopped
    10 ml (2 tsp) dried mixed herbs
    60 ml (4 tbsp) mustard sauce
    60 ml (4 tbsp) frozen corn
    salt and pepper to taste
    1 Bunch spring onions, trimmed and thinly sliced
    250 ml (1 cup) Spekko Long Grain Parboiled Rice
    1 Liter (4 cups) chicken stock

Method

    1. Heat butter in saucepan and fry the mustard seeds until they “pop”. Add the onion and ham. Cook until onion is soft and translucent.
    2. Add remaining ingredients, cover and bring to the boil for 5 minutes.
    3. Reduce heat, and simmer for 20 minutes or until rice is tender.
    4. Serve with a green salad of your choice
