250g Spekko India Gate Basmati Rice (recommended by Spekko Rice)
8 Baby corn cobs, each cob cut into 3 pieces
8 Baby carrots, each chopped into 3 pieces
1 Small red onion, finely chopped
150g Baby tomatoes, halved
100g Feta cheese, crumbled
45ml (3 tbsp) Garden herb pesto
Extra virgin olive oil
Basil leaves to garnish
1. Cook the rice according to the instructions on the packet. Rinse under cold water and refrigerate until needed.
2. Blanch the baby corn and carrots and set aside to cool.
3. Mix the rice, blanched vegetables, onion, baby tomatoes, feta cheese and pesto. Drizzle with olive oil and garnish with basil leaves. Serve.
