- 1 onion, finely grated
- ½ carrot, finely grated
- ½ pepper, chopped
- 7, 5 ml (1 ½ tsp)crushed garlic
- 5ml (1 tsp) Italian herbs
- 15 ml (1 tbsp) chilli powder
- 5 ml (1 tsp) cumin powder
- 5 ml (1tsp) coriander powder
- 500 g lamb mince
- 1 X 410 g can chopped tomatoes
- 500 ml (2 cups) cooked Spekko Saman Brown Rice
- 65 ml (1/4 cup) chopped fresh coriander
- 125 ml (1/2 cup) grated mozzarella cheese
- 65 ml (1/4 cup) chopped spring onions
- 6 green or red peppers, halved and deseeded
- grated Parmesan cheese to serve
- salt and pepper to taste

Method
- Heat oven to 180ºC.
- Sauté onions, carrot and chopped pepper in olive oil until caramelised.
- Add garlic, Italian herbs and spices and sauté for 30 seconds.
- Add mince and cook until browned.
- Add tomatoes and simmer for 20 to 30 minutes until cooked. Cool down.
- Stir in brown rice, coriander and grated mozzarella. Season to taste.
- Steam peppers for 5 to 10 minutes. Lie on a baking tray and drizzle with olive oil.
- Stuff peppers with rice mixture and bake for 15 to 20 minutes until cheese begins to melt and bubble.
- Sprinkle with Parmesan cheese and serve with a crispy salad.
