45ml (3 tbsp) butter
3 dried red chillies
5ml (1 tsp) turmeric
5ml (1 tsp) chopped garlic
5ml (1 tp) chopped ginger
1 chopped red chilli
250ml (1 cup) chopped onion
250ml (1 cup) chopped red pepper
500ml cooked Spekko Long Grain Parboiled Rice
125ml (1/2 cup) yoghurt
5ml (1 tsp) toasted cumin
5ml (1 tp) sugar
250ml (1 cup) grilled and sliced chicken breast
salt and pepper to taste
10ml (2 tsp) chopped spring onions
1.Heat the butter in a frying pan, add the dried chillies and the turmeric and fry for 15 seconds. Add the garlic, ginger and the fresh chillies and fry for 1 minute.
2.Add the onion and red pepper and cook for 5 minutes.
3.Add the rice, yoghurt and cumin cook until the liquid has been absorbed and the rice grains separate. Add the chicken and heat through.
4.Season to taste and garnish with the chopped spring onions
