500g Ostrich fillet, cubed
2 Onions, cut into chunks
1 each Red, green and yellow peppers, cut into chunks
250ml (1 cup) Ready-made pepper sauce
Cranberry sauce (optional)
250ml (1 cup) Spekko Long Grain Parboiled Rice
45ml (3 tbsp) Chopped fresh parsley
15ml (1 tbsp) Lemon zest
Salt and pepper to taste
1.Cook Spekko Long Grain Parboiled Rice according to instructions on packet, mix in the lemon zest and finely chopped fresh parsley and toss lightly.
2.Thread the ostrich fillet, onions and peppers onto skewers. Season with salt and pepper.
3.Grill the kebabs over coals or in the oven set at medium heat for about 10 minutes.
4.Mix the pepper sauce with cranberry sauce.
5.Spoon rice into a shallow serving dish and layer the ostrich kebabs over the rice, serve sauce on the side.
