Spicy brinjal rice
This dish is made by frying the brinjals with the aromatic spices and adding this to the rice - creating a spicy rice dish that can be enjoyed as a complete meal.
Ingredients
- 500 ml (2 cups) Spekko Long Grain Parboiled Rice
- 30 ml (2 tbsp) cooking oil
- 10 ml (2 tsp) mustard seeds
- 5 ml (1 tsp) cumin seeds
- 1 medium-sized onion, finely diced
- 500 ml (2 cups) brinjals, diced
- 2 green chillies, de-seeded and finely sliced
- 5 ml (1 tsp) turmeric power
- 30 ml (2 tbsp) lemon juice
- chopped fresh coriander for garnishing
- sprig of curry leaves
- salt to taste
Method
- Cook rice according to directions on the packet, drain and set aside. You will get approximately 8 cups of cooked rice.
- Add oil to a medium-sized frying pan. Heat for a minute or two.
- Add mustard seeds and curry leaves, cumin seeds, onions, diced brinjals and greens chillies.
- Cook over a moderate heat until brinjals are cooked and slightly browned – approximately 10 – 12 minutes.
- Add salt and turmeric powder.
- Cover and cook for another 5 minutes. Stir in lemon juice and cooked rice.
- Garnish with fresh chopped coriander.
