2 Ripe avocadoes
1 Lemon juiced
1 Butter lettuce
¼ English cucumber, sliced
Rocket, baby beetroot leaves and mint
200g Smoked chicken, sliced
100g Cooked Spekko Long Grain Parboiled Rice
1 Red pepper cut into strips
Salt and freshly ground pepper to taste
1. Peel avocado, quarter, and fan out quarters and cover with lemon juice.
2. Segment the grapefruit, and squeeze excess juice onto segments.
3. Peel and slice the mango.
4. Line 4 dishes with the butter lettuce and cucumber slices.
5. Mix smoked chicken, rice and excess grapefruit juice and place on top of lettuce in bowls. Garnish with avocado, mango, red pepper and grape fruit segments.
