Sweet pongal with rose water
A spectacular looking dessert from Chef Nicky Gibbs. Easy to make and really good tasting. Pongal is a Tamil dish from Sri Lanka.
Ingredients
300 g cooked Spekko Long Grain Parboiled Rice
120 g caster sugar
120 ml water
300 mlfull cream milk
2 ml ground cardamom
30 g butter
30 g dried cranberries
30 g cashew nuts
20 ml rose water
Method
1.Place sugar and water into a pot, dissolve sugar and cook to a syrup.
2.Add the cooked rice and the milk and stir till smooth.
3.Add the rose water and stir till thickened.
4.Add butter, cardamom, cashew nuts and raisins and mix together and serve hot.
