Thai beef and rice soup
In Thailand many a meal will include rice, specifically Jasmine rice. In fact, the Thai word for eating (ghin khao) is literally translated as "eat rice". A typical Thai meal will also, always start with a soup. This is a warming, quick and easy winter soup.
Ingredients
- 30 ml (2 tbsp) sunflower oil
- 1 spring onion, chopped
- 1 thumb-sized piece ginger, chopped
- 5 ml (1 tsp) chilli flakes
- 2 large fresh green chillies, chopped
- 125 ml (½ cup) uncooked Spekko Royal Umbrella Jasmine Rice
- 300 g beef steak, cut into thin strips
- 500 ml (2 cups) vegetable stock
- 1 x 400 ml can coconut milk
- 60 ml (¼ cup) chopped peanuts
- salt and freshly ground black pepper to taste
Method
- Heat oil in a saucepan and fry spring onion, ginger, chilli flakes and fresh chillies for a few minutes until fragrant.
- Add Spekko Royal Umbrella Jasmine Rice and meat and fry for a few minutes. Add stock and coconut milk and simmer on a low heat for 10-15 minutes. Do not overcook, as the beef will become tough.
- Season to taste and sprinkle with peanuts. Serve immediately.
