250 ml (1 cup) Spekko Saman White Rice
250 ml (1 cup) water
4 green cardamom pods
750 ml (3 cups) rose water
125 ml (1/2 cup) sugar
250 ml (1 cup) fresh cream
red food colouring
mint leaves to garnish
strawberries to serve
1. Rinse Spekko White Rice in a strainer and transfer the rice to a non-stick pot. Add 250 ml water and bring to the boil. Add whole green cardamom pods and simmer.
2. Pour in rose water and simmer until the rice pudding starts to thicken. The rice should be thick and slightly mushy.
3. Add sugar and fresh cream and continue to cook until the rice pudding is thick and creamy. Add 2 drops of red food colouring. Allow to cool and refrigerate.
4. Scoop the rice pudding with an ice cream scoop and decorate with fresh mint leaves and finely chopped strawberries.
