500 ml (2 cups) cooked Spekko Saman Brown Rice
200 g cooked butternut chunks
handful of flat leaf Italian parsley, chopped
80 ml (1/3 cup) olive oil
15 ml (1 tbsp) balsamic vinegar
2 – 3 Slices feta cheese, crumbled
salt and freshly ground black pepper to taste
6 Chicken breast fillets
chicken spice of your choice
1. Place the Spekko Brown Rice, butternut, parsley, 30 ml of the oil and balsamic vinegar in a bowl and toss.
2. Add feta and season to taste.
3. Heat the remaining oil in a large frying pan. Season chicken fillets with chicken spice, salt and pepper and pan-fry chicken breasts until golden brown and just cooked.
3. Serve chicken with brown rice and butternut.
