West African chicken and rice one pot dish
Chicken is a favourite ingredient in African food. This dish which is a staple in West African countries can be cooked in one pot in under an hour.
Ingredients
- 30 ml (2 tbsp) oil
- 8 chicken thighs or drumsticks
- 1 onion, chopped
- 2 cloves of garlic, crushed
- 1 large tomato, chopped
- 30 ml (2 tbsp) tomato paste
- 30 ml (2 tbsp) dried basil or 125 ml (½ cup) fresh basil leaves
- 500 ml (2 cups) uncooked Spekko Long Grain Parboiled Rice
- 1 litre (4 cups) chicken stock
- salt and freshly ground black pepper to taste
Method
- Heat oil in a large saucepan and brown chicken pieces for 3-4 minutes. Spoon out and set aside.
- In the same saucepan, add onion and garlic. Fry for 3 minutes or until soft.
- Add tomato, paste and basil and cook for 2-3 minutes or until fragrant.
- Return chicken to saucepan with stock and Spekko Long Grain Rice. Cover with lid and simmer for 30-35 minute or until rice and chicken is cooked. Add more liquid if necessary.
- Season and serve.
